A recipe that will make you hungry for dinner right now...

Here is a quick, easy and delicious dinner recipe that is packed with flavour and nutrients for a healthy body and mind. Plus, the potent benefits of doTERRA Cilantro and Basil oils can also help to support healthy digestion, immune function and more... (read on below)...


Super Easy Chicken Stir-fry with Basil and Cilantro Oil

Ingredients

1 cup of brown rice

2 cups water

Olive oil

2 x chicken breasts, diced

Vegetables of your choice. I used the following:

- Capsicum

- Beans

- Broccoli

- Asparagus

- Mushrooms

1 drop of doTERRA Cilantro oil*

1 drop of doTERRA Basil oil*

Method

Put the brown rice in a strainer and rinse it under some running water. Using a large pot, add the rinsed rice and two cups of water. Bring to a simmer, then cover and cook for 25 mins over a low heat.

In the meantime, cook the chicken in a pan in some olive oil.

Add your vegetables and cook over a medium heat, turning with a wooden spoon occasionally to ensure everything is cooked through.

Use whatever vegetables you like that work well in a stir-fry, or whatever you have in the fridge. To ensure that my veggies were cooked through once I had turned them in the pan for a little while, I added half a cup of water, covered the pan over a low heat, and steamed them. This just ensures that veg like broccoli are cooked through and not too crunchy! Keep an eye on your pan though. Taste and test your veg as you are cooking so that you cook it to your liking.

Once the rice is cooked, take the pot off the heat. Leave for 5 mins with the lid on, before using a fork to fluff the rice before serving.

Once everything is cooked add some (but not all)** of the rice to the stir-fry and mix through. Add as much of the rice as suits your tastebuds. I like to have some smart carbs in my evening meal as they are good fuel for brain and body and help you to feel satisfied, but not too much at dinnertime as I also like to be kind to my digestion overnight.

Finally, put a little olive oil, say maybe 1 or 2 tablespoons, in a small jar (the smallest you have). Add the doTERRA Cilantro and Basil oils to the jar, put the lid on and shake well.

Drizzle the oil over your stir-fry and rice and mix through, serve and ENJOY!


* This recipe uses doTERRA Cilantro and Basil oils as they are 100% pure and graded for use in cooking. However, many other oils you can buy are not of the same quality, may contain synthetics or fillers, and are not independently tested, so please do not substitute unless you are 100% certain that they are safe for internal consumption.


** I love brown rice, but to be honest it is a bit of a pain to cook if you are in a hurry. So I always try to cook a bit extra when I make it, then I have some in the fridge to use the next day in my lunch (brown rice, diced avocado and a tin of tuna anyone?). Alternatively I will freeze some in a zip lock bag, then when I am ready to use it I will let it defrost and refresh in some boiling water from the kettle.
